Jarred Sun-dried packed in Olive Oil:
Keep on hand for pizza, pasta and calzones.

Fresh Roma:
Alternate sliced tomatoes with fresh mozzarella slices. Drizzle with pesto for a great Caprice salad. Perfect for side-dish for Italian dishes.

Fresh Grape or Cherry Tomatoes:
Heat 1/2 teaspoon olive oil in skillet. Saute 1 pod of garlic or bit of minced garlic for 1 minute. Add 1 cup sliced tomatoes, 3 Tablespoons fresh lime juice, 3 Tablespoon white wine and a sprinkling of red pepper flakes (pizza pepper). Saute over medium high heat until wine reduces, about 3-5 minutes. Do not let tomatoes get too soft. Serve over grilled fish.

Fresh Beefsteak or Garden:
Slice tomatoes horizontally into thirds. Coat with olive oil and season with salt and pepper. Grill tomatoes, covered on medium-high grill on one side for 1 minute, then flip (do not flip tops). Arrange fresh slices of mozzarella cheese on flipped tomato slices and grill till cheese begins to melt, 1-2 minutes. Serve with fresh basil leaves or pesto.
