Yellow Squash/Zucchini

Follow directions of stir-fried bell peppers.

Preheat grill to medium high. Slice squash in half. Brush with olive oil. Season with salt and pepper. Grill 5 minutes each side. Serve immediately.

Zucchini Chips:
Preheat oven to 175F. Select long slender zucchini to avoid seeding. Cut very thinly with a sharp knife or slicing portion of your grater. Line a baking sheet lined with parchment paper and spray paper with cooking spray. Spread slices on a baking sheet, as closely together as possible without overlapping. Spray very lightly with cooking spray and spring with salt. Cook between 2 and 2 1/2 hours, according to desired crispness. May be stored in covered container, but they are crispiest when straight from the oven. 1 zucchini is about 1 serving of chips.

Zucchini Parmesan:
Line baking sheet with parchment paper and coat with cooking spray (butter flavor is nice for this). Spread thinly sliced zucchini on the pan and spray tops with cooking spray. Sprinkle with grated parmesan. Broil until cheese begins to brown. Enjoy warm.
