Mango Salsa

1 large mango, peeled and cut into chunks
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped cilantro
1 chopped jalepeno
1 Tablespoon minced fresh ginger
2 Tablespoons brown sugar
3 Tablespoons fresh lime juice
1 Tablespoon olive oil
1/4 teaspoon salt.
Fresh cracked pepper to taste

Mix all ingredients. Cover and chill for at least 30 minutes or up to 2 hours before serving. Great for side with fish. May substitute pear, banana, or peach for mango.
