Pecan Crusted Chicken

My daughter, Hilary, turned me onto this one. We love it and it’s super easy. You could easily modify it to use fish as well.

½ teaspoon salt

1 teaspoon thyme  (I didn’t have any, so I substituted oregano)

1 teaspoon marjoram (I sure didn’t have this, so I substituted basil – still delicious!)

1/4 cup parmesan

1 cup pecans – processed fairly fine in food processor

chicken breasts

Mix first five ingredients together. Spray baking dish and one side of chicken breast with cooking spray. Coat sprayed side of chicken in mixture and then lay that side face down in baking dish. Spray top side of chicken with cooking spray. Pile on rest of mixture. Drizzle top with small amount of oil. Bake at 350 degrees for 30-50 minutes, according to thickness of chicken. Serve hot.
