One-Pan Potatoes and Pepper “Steak”

4 medium potatoes, sliced 1/4 inch thick and microwaved 6 to 10 minutes until tender

1 lb. shaved beef
1 Tablespoon pepper, or less to taste
1 clove of garlic
2 Tablespoons oil
1 green bell pepper, cut into stripes

While potatoes cook, toss beef with pepper and heat oil in large skillet over medium high heat; add beef and stir-fry for about 3-5 minutes, until just done. Remove beef. Add green pepper to skillet; stir-fry 3 minutes. Add potatoes and saute together for 5 minutes. Add beef and stir together until heated through. Season with salt.
