Ginger Beef with Bok Choy

This is a recipe that tastes pretty close to my favorite restaurant in Taiwan. Yet, easy and quick once the beef is ready.

1 lb. flank or tenderized steak 
¼ teaspoon minced garlic
3 Tablespoons minced ginger
1 Tablespoon soy sauce
1 Tablespoon rice vinegar
½ teaspoon crushed red pepper
2 Tablespoons olive oil
4 cups bok choy, halved or shredded
½ teaspoon salt
¼ teaspoon pepper
Hot cooked rice

Freeze steak 30 minutes, so it slices nicely across the grain into ¼ inch strips. Combine next five ingredients in a ziplock baggie.  Add steak and allow to marinate for 20 minutes. Heat oil in skillet over high heat until hot. Add steak and cook, stirring constantly, 3-5 minutes until browned. Add bok choy and cook 2-3 minutes, stirring constantly. Add salt and pepper; toss gently. Serve with rice.
