Garlic Baked Tenderloin
This one is so easy and yet very flavorful, with only four ingredients. It also uses one of the lesser expensive cuts of meat — a win/win all the way around.
1 pork tenderloin – unflavored (some tenderloins are packaged in a BBQ or lemon pepper flavoring, make sure you purchase one without it)
Several pods of garlic
Olive or vegetable oil
Preheat oven to 350 degrees. Remove tenderloin from packaging. Often there are two tenderloins packed into one package. Because this dish doesn’t reheat well (seems to be dry upon reheating), choose the amount that you will eat at one sitting.
Cut deep vertical slits into tenderloin without cutting all the way through. Space slits about 1.5 inches apart. Peel enough garlic pods for each slit and bury one pod into each slit.
Rub entire tenderloin with cumin, covering generously.
Heat several tablespoons of oil in a skillet and brown tenderloin on all sides. Transfer tenderloin from skillet to appropriate-sized baking dish.
Bake tenderloin at 350 degrees until no longer pink. Time will depend on size of tenderloin – somewhere between 30-60 minutes. Serve immediately.
