Fish Tacos

Three ingredients! What could be better?

1 pound fish fillets (even frozen will work)
Corn/flour tortillas (these mixed ones are best for this)
Prepared Corn Salsa (my cousin Becky Sanders likes Trader Joe’s best)

Preheat oven to 425. Spray baking sheet with Pam. Coat fish with spray as well. Bake 5 minutes. Turn fish over and spray with Pam. Bake another 3-5 minutes or until fish flakes.

Stuff fish and salsa in warmed tortillas. May also stuff with grated cheese, “slaw mix” (found bagged in produce section), lettuce, avocado or whatever else you have on hand. Serve immediately.

Note: fish may be grilled as well. Just rub raw fillets with oil and sprinkle with spices before grilling. Grill over medium heat 5-7 minutes, until fish flakes easily.
