Pizza Dough

1 ¼ cups water
1 pkg. yeast (1 Tablespoon)
¼ cup oil
3 ½ cups bread flour
½ teaspoon salt
1 TBS. corn meal

Heat water in microwave 45 seconds. Add yeast and let sit 5 minutes. Add oil and blend. Mix rest of ingredients. May either use immediately or let rise about 45 minutes for fluffier dough (thick crust). Either way, sprinkle pizza pan with corn meal before pressing dough into pan. This will help it cook evenly. Add pizza toppings and bake at 400˚ for 20 minutes. Yield: 2 pizza crusts. (Raw crust freezes well. Thoroughly thaw before making into a crust. May also prepare a complete pizza with toppings to freeze  – cover tightly with foil for freezing. Cook frozen pizza at 425*).

We love to do grilled pizza for parties. When guests arrive, have toppings available in individual bowls. Allow ¼ of recipe above for each person. Allow them a workspace to “roll-out” their own pizza onto parchment paper. Well-oil bottom of individual pizza and grill dough on hot grill for 2-3 minutes. Bring inside. Oil uncooked side of pizza. Have guests put toppings on grilled side of pizza and return to grill – three to five minutes more – until done through and ingredients are hot and melted. Note: According to grill size, you may not be able to cook everyone’s pizza at the same time. Plan accordingly.
