Cucumbers

Chinese style:
Cube 1 pound of cucumbers, unpeeled. Toss with 1/2 Tablespoon of kosher salt and let stand for 1 hour at room temperature.
Meanwhile, prepare dressing of 1 Tablespoon sesame oil, 1/2 teaspoon red pepper flakes, 1 pod of garlic, 3 Tablespoons rice vinegar and 2 Tablespoons honey. Mix and set aside.
Rinse cucumbers lightly under cold running water, drain and place into bowl. Cover with dressing and chill till serving. Will keep several days in refrigerator.
Indian or Greek style:
Slice 1 pound of cucumbers, unpeeled. Toss with 1/2 Tablespoon of kosher salt and let stand for 1 hour at room temperature.
Rinse cucumbers lightly under cold running water, drain and place into bowl. Cover with plain yogurt just before serving. Doesn’t keep well.
