Quick Italian Chicken

1/2 jar of chunky spaghetti sauce Boneless chicken breasts Mozzarella cheese   Spray casserole dish with Pam. Place chicken breasts in dish and cover with spaghetti sauce. Bake for 30 minutes, uncovered at 350°. Sprinkle chicken with mozzarella and return to oven for additional 15 minutes. Serve over noodles.

Picante Chicken

1 1/2 cups picante sauce 3 Tablespoons packed light brown sugar 3 Tablespoons Dijon mustard 4 boneless chicken breasts   Mix first three ingredients well. Pour over chicken, arranged in 2 quart baking dish. Bake at 350° for 45 minutes or until chicken is done. Serve over rice.

Monte Cristo Sandwiches

2 pounds ground beef 1 medium onion 1 can tomato soup 3 Tablespoons ketchup 1 Tablespoons mustard 1 Tablespoon rice vinegar   Brown meat in skillet. Add chopped onion and cook until tender. Add other ingredients and cook slowly 15 to 20 minutes. Serve over buns.
