This is one of those recipes that is a guideline. You can substitute or omit the meat and play with which vegetables you put in. Basically, it just needs the tomatoes, a few veggies, some type of canned bean and the Italian seasonings. What do you have in your kitchen?
3 cups water
1 1/2 lb. beef cubes or Italian sausage
1/2 chopped onion
2 carrots, sliced
1 28 oz. can stewed or diced tomatoes
3 cubes bouillon
1 cup chopped cabbage
1 can drained chickpeas (garbanzo beans)
1 can drained and rinsed kidney beans
1 teaspoon dried basil
2 teaspoons dried oregano
½ cup dry noodles
Place all ingredients except noodles in crockpot, with meat on the bottom. Cook on high for 4-5 hours or low for 8-12. Twenty minutes before serving, add dry noodles if desired.
May serve with grated parmesan cheese.
