I love freshly prepared Thai food. There is nothing like walking through the market and ordering a green papaya salad, prepared before your eyes. Here is my American simplified version. Feel free to substitute a regular bowl and a potato masher if you don’t have a pestle and mortar on hand.
1 pkg pre-shredded broccoli slaw (found bagged in the produce section near cabbage slaw)
1 clove garlic
1 tomato, quartered
6 green beans
2 Tablespoons of roasted peanuts
1 teaspoon fish sauce
2 teaspoons raw sugar
1 ½ Tablespoons lime juice
1. Place the garlic and chili into a mortar and pound it roughly.
2. Cut the beans into sections and add to the mortar together with the broccoli slaw
3. Add peanuts and pound 4. Add sugar, fish sauce, and lime juice and pound
5. Add tomato and pound softly. Garnish with cilantro.
6. Serve immediately.
Add cooked chicken for a main dish.
