Add blue cheese, cream cheese, and sugar in food processor. Process until mixed. When still processing, slowly drizzle rice vinegar into mixture. Taste. Add tangy (vinegar) or sweet (sugar) according to preference, while keeping a thick consistency. Add this dressing to coleslaw and mix well. Salt and pepper to taste. Let season in refrigerator for at least 30 minutes before serving. When ready to serve, add a teaspoon or so of milk if dressing hasn’t thinned enough.
Serve with grilled steak and baked potatoes for a complete meal.
