In our Asian life of no packaged-mac-and-cheese, this became a delicious substitute – and (may I add?), a preferred one. This is old-fashioned-comfort-food-goodness.
2 cups macaroni, cooked according to package directions
3 large eggs
1 ½ cups milk
1 teaspoon salt
2 ½ cups grated cheddar cheese
dash of pepper
Rinse macaroni immediately after cooking in cold water to keep it from continuing to cook. Grease 1 10x6x2 inch casserole dish with butter. mix together eggs, milk, salt and pepper. Layer the macaroni and grated cheese in dish a couple of times. Cover with egg mixture. Top with additional cheese, if desired. Bake at 325 degrees for 40-50 minutes.
