Sausage Casserole

This is one of my go-to’s when I’m called to take a covered dish. It’s easy to put together, inexpensive and I haven’t found anyone that doesn’t love it. See what you think.

1 ½ lb. mild pork sausage

1 large green pepper, chopped

1 medium stalk celery and leaves, chopped

2 pkg. chicken noodle soup mix

4 ½ cup water

1 cup cooked rice

1 small can water chestnuts, sliced

 

Fry sausage, stirring to crumble; drain off grease. Cook green pepper and celery until tender in pan drippings; add soup mix, water, rice and chestnuts. Simmer for 15 minutes. Turn into casserole. Cover; bake at 350 degrees for 1 hour and 30 minutes. (Easily frozen and reheated to serve).
