Greek “Gyro”

Although being in Athens may not be an option for dinner, this fabulous ethnic meal is. It includes all the best flavors of Greece with simple available ingredients.

1 lb. ground beef

1 Tablespoon Greek seasoning (I use Adam’s)

 

Mix together in small bowl and divide into four grilling “gyros”. Heat grill or skillet to medium. Cook patties for 3-5 minutes per side; longer if patties are very thick. Keep warm till serving.

Feta Sauce:

 

4 oz. feta cheese, crumbled

4 oz. cream cheese

¼ cup plain Greek yogurt 

¼ cup Peperoncini peppers, sliced

½ tsp. lemon zest minced (I use several leaves of fresh lemon balm instead)

Salt and pepper to taste

 

Combine all ingredients in a food processor and process until smooth. Serve on gyro patties.

Greek salad

 

Spring mix

Cherry tomatoes, halved

Variety of Kalamata and stuffed green olives, pitted

Cucumber, cubed

Feta cheese, crumbled

Peperoncini peppers

 

Toss all ingredients and serve with favorite feta salad dressing (we like Cardini’s).

“Pita”

 

Flour tortillas, one per person

 

Lightly brush each side of each tortilla with olive oil. May use garlic olive oil if preferred. Grill over medium heat, 1 minute each side just before serving. Serve with hummus
