This is very similar to one found at Cheddar’s Restaurant. It’s also quite healthy.
1 teaspoon oil
2 garlic cloves
4 4-oz. chicken breasts
2 cups sliced mushrooms
1/2 cup chicken broth
2 Tablespoons Dijon mustard
3 Tablespoons all purpose flour
1/2 cup apple cider or juice
Heat oil, add garlic and cook 1 minute. Add chicken, mushrooms , broth and mustard. Boil then reduce heat; simmer, covered till chicken is cooked – 10-12 minutes. In small bowl, combine flour with enough cider to make a paste, then add remaining cider and stir till smooth. Add to chicken mixture and cook till thickened, about 2 minutes.
Serve with rice pilaf and a green vegetable for a meal.
