Tuscan Chicken

This one was shared by my best friend in high school, Susie. Well worth keeping in touch!



2 lbs boneless chicken breasts, pounded thin



Italian seasoning

1 pint grape tomatoes

2 Tablespoons balsamic vinegar

1 Tablespoon water

Feta or fresh mozzarella for garnish (opt.)



Heavily salt, pepper and season chicken with Italian seasoning.


Heat 2 Tablespoons olive oil (or spray with Pam) in skillet. Saute seasoned chicken in oil for 3-5 minutes on medium high, each side or until done. Set chicken aside, keeping warm.


Add tomatoes to skillet; cook 4 min. or until skin pops. Add vinegar & water; cook 4 min. more. Serve over warm chicken.
