This is always a quick “go-to” for our family. Hope you will find it to be one for yours as well.
3 Tablespoons all purpose flour
3 Tablespoons butter
Cooked chicken (may be left over, canned or from a rotisserie chicken)
2 cans diced green chilies
1 can Rotel tomatoes
Crushed tortilla or corn chips
Melt butter in large saucepan. Open Rotel tomatoes and have chicken broth ready. Add flour to melted butter and stir quickly. Immediately add Rotel and 1/2 cup of broth. Stir till smooth. Add chicken and chilis. May even stir in some cumin, if you like. Stir till steamy, adding broth as needed. Soup will be runny. Spoon into bowls and add chips and cheese to thicken.
