Zucchini Cinnamon Bread

¾ cup oil

4 eggs

1 ¼ cup brown sugar

2 ¼ cup grated zucchini

3 teaspoons vanilla

1 teaspoon salt

1 teaspoon baking soda

½ teaspoon baking powder

3 teaspoon cinnamon

1 cup pecans

3 cups flour

 

Combine oil, eggs, sugar, squash and vanilla. Blend well. Add dry ingredients to the mix. Add nuts. Bake 70-90 minutes in 2 loaf pans for 325 degrees.
