We discovered this recipe at a New Mexican B&B in 1991. Delicious!
5 Tablespoons melted butter – divided
3 eggs, lightly beaten
¾ cup milk
1 Tablespoon granulated sugar
½ teaspoon vanilla
¼ teaspoon ground cinnamon
¼ teaspoon salt
½ cup plus 1 Tablespoon flour
2 small apples, peeled, cored & thinly sliced
3 Tablespoons brown sugar
Combine 2 Tablespoons melted butter with eggs, milk, granulated sugar, vanilla, cinnamon, salt & flour. Beat until mixed. Set aside.
Heat remaining 3 Tablespoons butter with apple slices in 10-inch skillet until sizzling and slightly cooked. Pour in batter. Sprinkle top with brown sugar and bake at 450 degrees for 25 minutes or until well browned & puffed.
Serve immediately. Cut into wedges to serve. Makes 6 servings.
