Another holiday favorite. Introduced to me by Janelle, my sister-in-law.

2 cans green beans (in Taiwan, we used fresh that had been parboiled till crisp-tender)
½ lb. uncooked bacon
¼ cup Dijon mustard
3 Tablespoons brown sugar
1 Tablespoon water

Drain green beans. Cut bacon slices in half, then again in half long-ways. Wrap about 8 green beans each 1/4 slice of bacon. Mix together mustard, sugar, and water. Arrange bundles seam down in 9×13 inch baking dish. Drizzle with mustard mixture. Bake at 350 for 45 minutes or until bacon is browned. May finish last five minutes on broil or even on the grill to crisp bacon.

We had this for the first time in Taiwan during Thanksgiving in the home of an ex-pat South Carolinian. I’ve reduced the sugar and now, it’s on our table every year during the holidays.

3 cups mashed cooked sweet potato
½ cup sugar
½ teaspoon salt
2 eggs
½ cup milk
3 Tablespoons butter
1 teaspoon vanilla

Mix all ingredients; pour into a greased baking dish. Cover with the following topping:

Topping:
½ cup brown sugar
⅓ cup flour
1 cup chopped nuts
3 Tablespoons butter, softened

Crumble together with fork or hands. Sprinkle evenly over top of potato mixture. Bake at 350˚ for 35 minutes or until center is set.
