A great way to get flax seed into your diet. I love these. They are moist and very flavorful.
3 1/2 cups high fiber cereal (like All Bran)
1/2 cup ground flax seed
1 1/2 cup sugar
2 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
1 teaspoon salt
3 teaspoons lemon or orange rind
1/2 cup olive oil
2 Tablespoons orange juice
1 3/4 cup buttermilk
In large mixing bowl, combine cereal, flax seed, sugar, flour, soda and salt.
In separate bowl, beat eggs slightly. Beat in the rind, oil, orange juice and buttermilk.
Mix both dry and moist ingredients together. Stir well. Fill muffin tins 3/4 full with batter and bake at 375˚ for 18-25 minutes.
Our first years in Asia found us hungry for Mexican food. I soon learned the knack of making tortillas. The thinner you can roll them, the better they will be.
3 cups all purpose flour
3 teaspoons baking powder
3 teaspoons salt
1/2 cup Crisco
1/2 cup warm water
Mix all ingredients in order with hands. Shape into golf ball size. Roll flat on floured surface. In hot dry skillet, brown on each side until done.
